Cardamom-Chocolate Cupcakes

Serves: 10 cupcakes
Ingredients
  • 110 g butter
  • 1 tbsp milk
  • 110 g cane sugar
  • 2 eggs
  • 1 tsp vanilla extract
  • ¼ tsp grounded cardamom
  • 110 g plain flour
  • 1 tsp baking powder
  • 200 g mascarpone
  • 70 g dark chocolate
  • powder sugar to taste
  • fruit or sprinkles
Instructions
  1. Preheat the oven to 180 °C.
  2. Melt butter and milk.
  3. Whisk sugar with eggs, add vanilla extract, cardamom and lightly cooled butter.
  4. Sift the flour and the baking powder into the mixture. Whisk well, but not over-whisk it.
  5. Spoon the mixture into the paper cases.
  6. Bake for about 15 minutes.
  7. Let the cakes cool.
  8. Beat mascarpone until smooth, add melted chocolate and powder sugar to taste.
  9. Pipe the cream frosting onto the cupcakes and decorate with fruit or sprinkles.
  10. Store in a fridge up to 2 days.
