Apple Crumble with Vanilla Custard

  • Crumble
  • 200 g plain flour
  • 100 g cane sugar
  • 40 g almonds, roughly chopped
  • 130 g butter, room temperature
  • 400 g apples, peeled and cored
  • pinch of cinnamon
  • pinch of salt
  • Vanilla Custard
  • 570 ml milk
  • 55 ml whipping cream
  • 1 vanilla pod / ½ tsp vanilla extract
  • 30 g sugar
  • 4 egg yolks
  • 2 tbsp cornstarch
  1. Preheat the oven for 180 °C.
  2. Mix the flour, sugar, almonds, cinnamon, and salt. Add chopped butter and make a crumb.
  3. Chop apples into small cubes. Divide apples among six small ramekins, sprinkle with the crumb.
  4. Bake for 30 mins.
  5. Meanwhile make the custard: Heat the milk, cream and vanilla pod in a saucepan until it comes just up to the boil. Then take off immediately.
  6. Mix sugar, egg yolks and cornstarch - make a smooth paste.
  7. Pour the hot milk into the yolk paste and beat well.
  8. Return the mixture on a low heat, stirring until thick.
  9. Serve hot or warm.
